1Thinly slice half a red cabbage and one red onion using a mandoline or a knife.
2Add the sliced cabbage and onion to a bowl with 2 to 3 habaneros (diced), half a bushel of cilantro, and three heavy pinches of salt.
3Massage the ingredients together until the cabbage and onion soften, about 4-5 minutes.
4Add the juice of 2 to 3 limes, about a teaspoon of sugar, some Mexican oregano (about half a teaspoon), a fourth cup of white vinegar, and a teaspoon of black pepper.
5Mix all ingredients well, adjust to taste.
6Transfer the curtido into a jar, making sure to get all the juice in there.
7Wait at least a couple of hours before serving, but the longer it sits, the better it gets.
8Serve with taquitos, burritos, or whatever you want.
