Make buttermilk by mixing vinegar and milk together and letting it sit for a couple of minutes until it thickens and becomes slightly curdled.

Whisk the egg white in a medium-large mixing bowl until foamy and frothy.

Gently mix in the homemade buttermilk and melted butter.

Gently mix in the sugar and dry ingredients.

Heat a nonstick skillet to medium-low, adding butter if needed to grease the pan.

Add 1/3-1/2 cup of batter and cook for a couple of minutes until the edges are close to set and there are bubbles on top.

Flip the pancake and cook on the other side until golden brown on both sides.

Repeat with the remaining batter.

Serve warm with your favorite toppings.

0.5 cup all purpose flour
1 tablespoon white granulated sugar
0.5 teaspoon baking powder
0.25 teaspoon baking soda
0.125 teaspoon kosher salt

Tips
You can make them plain or add your favorite mix-ins like chocolate chips or blueberries.
Do not overmix the batter.
