Single Serve Pancakes

Directions

  1. 1Make buttermilk by mixing vinegar and milk together and letting it sit for a couple of minutes until it thickens and becomes slightly curdled.
  2. 2Whisk the egg white in a medium-large mixing bowl until foamy and frothy.
  3. 3Gently mix in the homemade buttermilk and melted butter.
  4. 4Gently mix in the sugar and dry ingredients.
  5. 5Heat a nonstick skillet to medium-low, adding butter if needed to grease the pan.
  6. 6Add 1/3-1/2 cup of batter and cook for a couple of minutes until the edges are close to set and there are bubbles on top.
  7. 7Flip the pancake and cook on the other side until golden brown on both sides.
  8. 8Repeat with the remaining batter.
  9. 9Serve warm with your favorite toppings.
