Protein Carrot Cake

Directions

  1. 1Peel the carrots.
  2. 2Shred the carrots.
  3. 3Add oats to the blender.
  4. 4Blend the oats until it becomes oat flour.
  5. 5Pour oat flour into a bowl.
  6. 6Add zero calorie sweetener to the bowl.
  7. 7Add vanilla whey protein powder.
  8. 8Add baking powder and baking soda.
  9. 9Mix all the dry ingredients.
  10. 10Add the shredded carrots.
  11. 11Add fat free greek yogurt.
  12. 12Add pure egg whites.
  13. 13Add one entire egg.
  14. 14Add the milk.
  15. 15Mix all ingredients until creamy and smooth.
  16. 16Grease the baking pan with oil.
  17. 17Pour the batter into the baking pan.
  18. 18Bake for 30 minutes at 180°C.
  19. 19Add greek yogurt to a bowl to make the frosting.
  20. 20Add 0.2% fat cream cheese.
  21. 21Add vanilla whey protein powder and sweetener.
  22. 22Cut half a lemon and add all of the juices to the bowl.
  23. 23Mix all the ingredients with a whisk until it becomes a smooth and creamy consistency.
  24. 24Put the frosting in the fridge.
  25. 25Take the cake out of the oven.
  26. 26Let it cool down for around 30 minutes.
  27. 27Separate the edges with a spatula and remove the baking pan.
  28. 28Take the cream out of the fridge, put it on top of the cake, and spread it around the entire cake.
  29. 29Add the zest of half a lemon on top.

  • 50 g zero calorie sweetener
  • 45 g vanilla whey protein powder
  • 100 g egg whites
  • 1 whole egg
  • 100 g fat-free greek yogurt
  • 100 g milk
  • 1.5 tbsp baking powder
  • 0.5 tbsp baking soda
  • 150 g greek yogurt
  • 50 g low fat cream cheese
  • 15 g protein powder
  • 0.5 lemon
  • 1 tbs stevia

Tips

  • If you prefer a less juicy cake, use only 100 g of carrots and add 30 g of oats.
  • Use whey protein powder and not casein only powder for baking
