Directions

  1. 1Drizzle a little olive oil on the bottom of a pot.
  2. 2Roughly chop the carrots, as the exact cut size doesn't matter since they will be puréed. Add them to the pot.
  3. 3Chop the celery into large pieces and add it to the pot.
  4. 4Chop the leeks into large pieces and add them to the pot.
  5. 5Chop the onion into large pieces and add it to the pot.
  6. 6Chop the zucchini into large pieces and add it to the pot.
  7. 7Chop the peeled and washed potatoes into large pieces and add them to the pot.
  8. 8Season the vegetables with salt and pepper.
  9. 9Add a bit more olive oil to the vegetables in the pot.
  10. 10Place the pot on the stove over heat and let the vegetables sweat for a bit.
  11. 11Add about 3.5 liters of chicken stock to cover the vegetables, adding a bit more stock or water if needed.
  12. 12Bring the soup to a boil, then reduce heat and let it simmer for about 45 minutes until all vegetables are cooked.
  13. 13Remove the pot from the stove.
  14. 14Use an immersion blender to purée the soup until it reaches a desired smooth consistency.
  15. 15Check the soup for any remaining chunks to ensure it is fully puréed.

Tips

  • The size of the vegetable chop doesn't really matter since they will be puréed.
  • Think about the strength of the vegetable's flavor; some vegetables, like zucchini, have a subtle flavor and you can add a lot, while others, like onion, have a strong flavor, so you don't want to overdo it.
  • If you just throw these vegetables in a pot of boiling water with a bit of salt and purée them, it will taste decent. Adding different levels of seasoning or stocks makes it better.
  • Add more stock or water if needed during cooking, as the liquid will reduce.
  • Check for chunks after blending to ensure a smooth texture.
