Buttered Noodles

Directions

  1. 1Boil the egg noodles in a minimal amount of water to ensure a high starch concentration.
  2. 2Reserve at least a quarter-cup of the liquid before draining the pasta.
  3. 3While the pasta cooks, melt the butter in a pan.
  4. 4Sauté the minced garlic in the melted butter until golden and fragrant.
  5. 5Whisk in the reserved pasta water to create a smooth emulsion.
  6. 6Stir in the soy sauce, parmesan, and red chili flakes until combined.
  7. 7Toss in the cooked noodles.
  8. 8Allow any clinging water to help thin the sauce and mix thoroughly until every strand is evenly coated and glossy.

  • 0.33 cup Parmesan cheese, grated
  • 1 tbsp Soy sauce
  • 1 tsp Red chili flakes
  • 0.25 cup Reserved starchy pasta water
