Nammoura (Lebanese Semolina Cake)

Directions

  1. 1In a bowl, mix the sugar and semolinas.
  2. 2Add the melted butter and mix well.
  3. 3Add the baking powder to the yogurt before adding it to the semolina mixture, then add the yogurt and mix thoroughly.
  4. 4Line a round baking dish with baking paper and press the mixture into it using the back of a wet spoon.
  5. 5Press the nuts all around the top.
  6. 6Slice parallel lines approximately 2.5cm apart, then in the opposite direction to create squares or diamonds, and place a blanched almond in the center of each.
  7. 7Brush the remaining butter on top.
  8. 8Bake at 180°C for 15-20 minutes on the lowest rack, then move it to the middle rack for another 15-20 minutes.
  9. 9Meanwhile, simmer sugar and water in a pot until thickened, then add lemon juice and orange blossom water.
  10. 10Once the nammoura is baked, pour the hot syrup over it and let it cool completely before slicing.

  • 280 g melted butter
  • 300 g Greek yogurt
  • 1 tbs baking powder
  • 0.5 cups blanched almonds
  • 400 g caster sugar
  • 240 ml water
  • 1 tbs lemon juice
  • 1 tbs orange blossom water
