Add two cups of all-purpose flour to a big bowl.

Add two teaspoons of baking powder and about half a teaspoon of salt.

Mix the dry ingredients with a whisk.

Get 3/4 of a cup of warm water and add in about two teaspoons of olive oil.

Pour the wet ingredients into the bowl with the dry ingredients.

Mix the dough with a rubber spatula until it forms a cohesive ball.

Cover the dough and let it rest for about 10 minutes to relax the gluten.

After 10 minutes, flour your surface and transfer your dough.

Lightly flour the top of the dough.

Roll the dough into a big ball.

Cut the dough into six equal pieces.

Roll each piece up into a ball.

If the dough gets sticky, dust it with a little more flour.

Take your rolling pin and roll each dough ball until it's about 6 inches in diameter.

Get a skillet and turn your heat on medium high.

The pan is ready when water disintegrates off the pan.

Lay your pita in the pan.

Cook for about two minutes, once you see it start to puff up, flip it over.

Cook for about another minute on the other side.

For the last 30 seconds, cover the pita to puff it up a bit more.

Remove the pita from the pan.

Tips
For a softer pita, brush the outside with olive oil before placing it in the pan.
To puff up the pita more, cover it for the last 30 seconds of cooking.
