1Prepare the cinnamon sugar butter filling: brown 1/2 cup of salted butter, mix with 1/2 cup of light brown sugar, 1.5 tablespoons of ground cinnamon and 1/4 teaspoon of vanilla extract.
2Peel and finely dice 2-3 apples.
3Mix 1/3 of the diced apples with half of the cinnamon filling.
4Line a baking sheet with parchment paper and brush it with 2 tablespoons of melted salted butter.
5Place the focaccia dough in the prepared baking sheet and gently stretch it to the edges.
6Spread the apple mixture over the dough and fold it over.
7Flip the dough and let it proof for 1-1.5 hours at room temperature.
8Preheat the oven to 215°C/420°F and place the rack in the lowest position.
9Mix the remaining 2/3 of the diced apples with the remaining cinnamon filling.
10Spread the apple mixture evenly over the dough and dimple it in.
11Bake for 23-25 minutes.
12Prepare the glaze: whisk together 125g of powdered sugar, 2-3 tablespoons of milk, a dash of vanilla extract and a sprinkle of cinnamon.
13Drizzle the glaze over the focaccia once it is out of the oven and brush it on top, sides, and bottom.
14Let the focaccia cool on a wire rack for 15 minutes, or until the glaze has hardened.
