Boil your noodles until they start to soften.

Drain the noodles, we want them bouncy not mushy.

Mix the Hoisin, soy sauce, sesame oil, and maple syrup or honey to create the sauce.

Chop the garlic cloves finely.

Slice the white and green parts of the scallions.

Heat vegetable oil in a large skillet, then add the chopped garlic and white parts of the scallions.

Toss everything together in the skillet until fragrant.

Pour in all the sauce into the skillet with the aromatics.

Add the boiled noodles to the skillet with the sauce and toss to coat.

Let the noodles cook undisturbed until the bottom turns crispy, about 2 to 3 minutes.

Season to taste and serve topped with sesame seeds and the green scallion parts.
