Directions
- 1Preheat your oven and bake the sweet potatoes until tender.
- 2While potatoes are baking, prepare the taco toppings by dicing tomatoes and onions.
- 3Dice the avocado and chop the parsley.
- 4In a bowl combine the diced tomatoes, onions, avocado, and parsley. Add salt and pepper, then mix well.
- 5Brown the ground beef and season it with your preferred taco seasoning.
- 6Grate the cheddar cheese.
- 7Once the sweet potatoes are baked, cut them in half and fill them with the seasoned ground beef, then top with the cheddar cheese, the prepared taco topping and sour cream.
