Blackened Catfish with Dirty Rice

Directions

  1. 1Heat up olive oil in a pot.
  2. 2Sauté vegetables with garlic paste.
  3. 3Add ground beef and andouille sausage.
  4. 4Drain grease from the meat.
  5. 5Season with salt, pepper, paprika, cayenne pepper, and Cajun seasoning.
  6. 6Mix well and add flour to thicken.
  7. 7Add beef broth along with cooked rice.
  8. 8Mix well until combined and set aside.
  9. 9Season the catfish fillets with Cajun and blackening seasoning.
  10. 10Heat olive oil in a skillet.
  11. 11Cook the fish on both sides for 3-4 minutes, adding lemon juice in between.
  12. 12Melt butter in a pan, add a little olive oil, garlic paste, and vegetables.
  13. 13Season with Cajun seasoning, paprika, salt, and pepper.
  14. 14Let it cook down a bit before adding beef broth along with heavy cream.
  15. 15Let it simmer over low heat for about 5 minutes.
  16. 16Add lobster tails along with Parmesan cheese.
  17. 17Once the sauce thickens, turn off the heat and set it aside.
  18. 18Plate the dirty rice.
  19. 19Add the blackened catfish.
  20. 20Pour the sauce on top.
