Peel the skins of the lemons, avoiding the thicker white part underneath (pith).

Place the lemon skins in a large glass jar that has a good seal.

Add 1 and 1/4 cup of Everclear (Grain alcohol) to the jar with the lemon skins.

Seal the jar tightly.

Store the sealed jar in a cool place away from light for 30 days.

After 30 days, make a simple syrup by combining 3 cups of water and 1 and 1/4 cup of sugar in a pot.

Let the syrup cool completely.

Strain the lemon-infused Everclear from the jar into a pitcher.

Once the simple syrup is cooled, add it to the strained lemon-infused Everclear.

Stir the mixture well.

Store the limoncello in the fridge.

Serve the limoncello cold.

1.25 cup Everclear (Grain alcohol)
3 cups water
1.25 cup sugar

Tips
If you don't have pure alcohol, you can use vodka.
Add more sugar if you like it sweeter.
Store in the fridge and serve cold
