Creamy Lemon Pasta

Directions

  1. 1Split the shrimp to get two equal halves.
  2. 2Cook about half a pound of your favorite pasta (linguini is used here) in lightly salted water.
  3. 3While your pasta cooks, add about 1 to 1.5 cups of heavy cream and raw shrimp (or picked rotisserie chicken meat) to a pan that is currently off.
  4. 4Once your pasta is about two minutes from being done, turn the pan on medium-high heat and bring the cream to a simmer.
  5. 5After about 60 seconds, when the pasta has about a minute left to be fully cooked, lift it out of the water.
  6. 6Turn off the heat and add lemon zest, lemon juice, chopped parsley, Parmesan cheese, and 1 or 2 minced garlic cloves to the pasta.
  7. 7Let the pasta sit for 30 to 45 seconds to absorb the heavy cream and lemon juice.
  8. 8If your pasta seems a little dry, add a splash of pasta water.
  9. 9To plate, grab a tong full of pasta, set it in your bowl, then twist the tongs.
  10. 10Add more cheese if desired.

Tips

  • When cooking pasta, keep stirring it until the water comes back up to a boil to prevent clumping.
  • If your pasta seems a little dry, add a little splash of pasta water.
  • When plating long pastas, grab a tong full, set it in your bowl, then twist the tongs.
