Orzo alla Nerano

Directions

  1. 1Start by thinly slicing your zucchini.
  2. 2Add a good amount of oil to a pan.
  3. 3Flavor the oil with some smashed garlic.
  4. 4Remove the garlic from the oil.
  5. 5Fry the zucchini in the flavored oil.
  6. 6Hit the fried zucchini with some salt while it's still hot.
  7. 7Toast your orzo in the same pan for a couple of minutes.
  8. 8Pour in your chicken broth.
  9. 9Season with salt.
  10. 10Simmer for about 10 to 15 minutes until the orzo is tender.
  11. 11Add in a little bit of butter.
  12. 12Add in half of your Parmesan and give that a stir.
  13. 13Add in the rest of your cheese and stir again.
  14. 14Finish with lemon zest.
  15. 15Add black pepper.
  16. 16Add freshly torn basil.
  17. 17Give that a stir.
  18. 18Fold in your fried zucchini.
  19. 19Throw in a little bit of lemon juice if you like.

  • 3.5 cups vegetable or chicken broth
  • 2 tbsp butter
  • 0.75 cup freshly grated Parmesan
  • 0.5 lemon zest
  • 0.5 lemon juice
  • 5 fresh basil leaves
  • black pepper
  • red pepper flakes
  • burrata

Tips

  • For a more authentic version, throw the fried zucchini in the fridge overnight to let the flavors develop.
  • Serve it with protein or eat it as is.
  • Adding butter to the orzo is not traditional, but is done in this recipe.
