Greek Parmesan Chicken & Potatoes

Directions

  1. 1Combine melted butter, grated parmesan, minced garlic, and pepper in a bowl.
  2. 2Pour the garlic parmesan butter mixture into a baking dish.
  3. 3Place baby potatoes in the baking dish with the garlic parmesan butter.
  4. 4Add chicken thighs to the baking dish.
  5. 5Drizzle olive oil over the chicken and potatoes.
  6. 6Season chicken with oregano, paprika, salt, pepper, and garlic powder.
  7. 7Add dijon mustard on top of the chicken.
  8. 8Squeeze fresh lemon juice over the chicken.
  9. 9Rub the seasoning and mustard into the chicken thighs.
  10. 10Grate lemon zest over the chicken and potatoes.
  11. 11Prepare garlic heads for roasting by drizzling with olive oil and sprinkling with salt.
  12. 12Sprinkle grated parmesan over the chicken and potatoes.
  13. 13Bake until golden and cooked through.
  14. 14Baste the cooked chicken and potatoes with the pan juices.
  15. 15Prepare the tzatziki sauce by combining plain Greek yogurt, roasted garlic, fresh dill, grated cucumber, olive oil, and salt in a bowl.
  16. 16Mix the tzatziki ingredients until well combined.
  17. 17Serve chicken and potatoes with a dollop of tzatziki sauce, a squeeze of fresh lemon juice, and a sprig of fresh dill.
