High Protein Crispy Chicken Mac n Cheese

Directions

  1. 1Season the chicken breasts with garlic powder, onion powder, paprika, cayenne, salt, and pepper, then mix well until fully coated.
  2. 2In a bowl, add crushed cornflakes, the same seasonings used on the chicken, and mix it up.
  3. 3For the wet station, add eggs and a splash of pickle juice, then mix again.
  4. 4Dunk your chicken in the egg mixture, followed by the crushed cornflakes, and press it down to get an even coating.
  5. 5Set the coated chicken on a rack and give them a spray with cooking spray.
  6. 6Oven bake at 200°C for 20-25 minutes, or air fry at 190°C for 15-18 minutes.
  7. 7For the mac 'n' cheese, in a pan, add low-fat milk, light cream cheese, pasta water, low-fat grated cheddar, and cheese slices.
  8. 8Let the mixture fully melt down, then add more seasonings (onion powder, garlic powder, and cayenne) and stir on low heat until it thickens up for 8 minutes.
  9. 9Finally, add your cooked macaroni and grated mozzarella, and mix everything together until it looks cheesy.
  10. 10Box the mac 'n' cheese into four equal servings.

Tips
