Directions

  1. 1In a small bowl, whisk together the flour, granulated sugar, brown sugar, and salt for the crumble topping.
  2. 2Pour in the melted butter and mix until crumbles form about the size of peas. Set aside.
  3. 3Preheat oven to 425°F and prepare a muffin tin with liners.
  4. 4In a mixing bowl, combine flour, baking powder, and salt for the muffins. Mix together and set aside.
  5. 5In a large mixing bowl, whisk together sugar, melted butter, eggs, ube extract, ube halaya, and milk until smooth and well combined.
  6. 6Gently fold the wet ingredients into the dry ingredients. It's okay if some small clumps of flour remain — do not overmix.
  7. 7Use a large ice cream scoop to equally divide the batter into each muffin tin.
  8. 8Generously top each muffin with the crumble mixture.
  9. 9Bake at 425°F for 15 minutes.
  10. 10Reduce heat to 375°F (without opening the oven) and bake for about 10 more minutes, or until golden and a toothpick comes out clean.
  11. 11Let cool in the muffin tin for 10 minutes.
  12. 12Transfer to a cooling rack.

  • 3 tbsp brown sugar
  • 1 pinch salt
  • 4 tbsp unsalted butter, melted and cooled
