Pinto Beans in a Crockpot

Directions

  1. 1Rinse two cups of pinto beans thoroughly.
  2. 2Place the rinsed beans directly into the crockpot, ensuring the water level is pretty high.
  3. 3Add 1/4 cup of chopped onions to the crockpot.
  4. 4Add two chopped garlic cloves.
  5. 5Add 1.5 teaspoons of black pepper.
  6. 6Add about a tablespoon of salt, noting that salt gets absorbed during cooking and more may be needed later.
  7. 7Add about a teaspoon of red pepper flakes.
  8. 8Set the crockpot on high for about 5 to 5.5 hours, or let them cook overnight on a lower setting.
  9. 9Once cooked, taste the beans and add more salt if necessary.
