1If making your own mayo, combine all ingredients in a quart mason jar, adding oil last, then blend with a stick/immersion blender and set aside.
2Combine all 1000 island ingredients, shake until combined, and place into the fridge.
3Combine all spices and seasonings.
4Drizzle cube steaks with olive oil, then sprinkle generously with seasoning and massage in.
5Flip cube steaks to the other side and repeat seasoning.
6Melt butter in a pan over medium heat.
7Add cube steaks to the pan and cook for about 5 minutes, until a light crust/sear forms.
8Flip and repeat cooking on the other side.
9Remove steaks from the pan and place onto a plate, covering with a bowl to allow steam to get trapped inside.
10Once steaks are cooked, slice into thin strips, then cut strips into 1-2 inch long slices.
11Add sliced steak to a bowl, then pour juices over top and toss to coat.
12To assemble, take a tortilla, then add cheese, a tablespoon or so of sauce, sauerkraut, steak, a little more sauce, then fold in the sides, and roll the tortilla up.
13Warm a pan to medium heat.
14Place wraps seam side down and cook until golden brown.
15Continue cooking until all four sides are golden brown.
16Repeat for remaining wraps.
