Add ground beef to a pan with enough water to cover it and the taco seasoning, break the beef into very fine pieces, bring to a boil, then simmer until the liquid is reduced.
Heat nacho cheese in a pot.
Warm the large tortilla in a pan until it is soft enough to fold.
Spread a scoop of seasoned beef onto the center of the tortilla, followed by a scoop of nacho cheese.
Place a tostada on top of the beef and cheese, then spread sour cream over the tostada.
Top with shredded iceberg lettuce and diced Roma tomatoes.
Fold the edges of the tortilla toward the center, overlapping them to form a hexagon.
Sear the wrap in a hot pan, folded-side down, to seal it.
Flip and toast the other side.
