1Start with the base: a quarter of a cup of black beans and corn.
2Add a third of a cup of rice to the base.
3Cook 100g of chicken mince and season it with most of a packet of Chipotle taco seasoning, reserving some for later.
4Add 125 grams of the seasoned chicken mince to the bowl.
5Add red onions, tomatoes, and lots of cucumber to the bowl.
6Prepare the sauce by combining low fat, high protein yogurt, a little bit of the reserved Chipotle seasoning, lime juice, and tomato sauce (or salsa).
7Add a little hot sauce to the sauce for extra spice.
8Pour the prepared sauce over the ingredients in the bowl.
9Place a lid on the Tupperware container and give it a good shake to mix everything.

Tips
Chicken mince is a hack for meal prep and convenience.
Use most of the Chipotle taco seasoning packet for the chicken mince, saving a little for the sauce.
Add salsa to the chicken mince to help it stick together.
Go crazy with cucumbers, tomatoes, and red onions as they are essentially zero calories.
The amount of yogurt in the sauce doesn't matter as it only adds more protein.
For spice, add hot sauce or chopped pickled jalapenos.
