1Add diced red bell pepper, orange bell pepper, yellow onion, and yellow potatoes to a sheet pan. Season with salt and pepper, add olive oil, and toss.
2Bake at 450 for ~30 minutes, or until softened/browned.
3Add lean ground beef or turkey to the sheet pan. Add seasonings and bake for 5 minutes.
4Once the meat is browned and cooked, pour a blended mixture of eggs, egg whites, and cottage cheese over the meat and vegetables.
5Top with shredded cheddar cheese and bake at 400 degrees for 25-30 minutes, or until the center is firm and edges are crisp.
6Let it sit for 10 minutes before slicing into ten equally sized rectangles.
7Add a rectangle to a burrito-sized tortilla along with a high-protein cream sauce (400g 0% Greek yogurt, 50g hot sauce, garlic, salt, and pepper to taste) and cilantro.
8Roll the burrito.
9Wrap in parchment paper and store frozen. To reheat, microwave for 3-4 minutes (flip halfway). Optionally, place on a pan over medium-high heat for 1-2 minutes per side to crisp the tortilla.
