Sheet Pan Quesadillas

Directions

  1. 1Preheat oven to 450 degrees Fahrenheit.
  2. 2In a large bowl, mix together chicken, cheese, beans, corn, rotel tomatoes & chiles, red onion, green onion, sour cream and taco seasoning.
  3. 3Brush melted butter on a cookie sheet.
  4. 4Layer tortillas on the cookie sheet, overlapping sides and placing two in the center.
  5. 5Evenly distribute the quesadilla mixture on top of the tortillas.
  6. 6Place two tortillas in the center, on top of the mixture, then fold over the tortillas on the edges.
  7. 7Brush on the rest of the melted butter.
  8. 8Place in the oven with a second cookie sheet on top of the quesadilla.
  9. 9Cook for 30-35 minutes.
  10. 10Remove from oven.
  11. 11Using a pizza cutter, cut the quesadilla into slices.
  12. 12Add desired toppings, serve and enjoy!

  • 3 cups shredded rotisserie chicken
  • 3 cups Monterey Jack cheese
  • 14 burrito sized flour tortillas
  • 1 stick butter, melted
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 can rotel tomatoes and chiles
  • 1 cup chopped green onion
  • 0.5 red onion, diced
  • 1 cup sour cream
  • 1 oz packet taco seasoning
  • avocados
  • salsa
  • limes
  • cheese
  • cilantro

Tips

  • Sour cream acts as a glue to hold everything together, but if you don't like it, just don't include it.
