Thinly slice your beef and place in a bowl to marinate with soy sauce, cornstarch, shaoxing wine and oil for 15 minutes.

While your beef is marinating, thinly slice your ginger and onions and separate the white and green parts of your scallions.

Combine dark soy sauce, light soy sauce, sugar, sesame oil, white pepper, and optional MSG and mix thoroughly.

Lube up your pan and toss in your steak and brown for about 2 minutes before removing.

Re-lube your pan and cook your ginger for about a minute.

Add in your onions and the white parts of your scallions and cook for about 3 minutes.

Add in your fresh rice noodles along with your beef and sauce and toss until the noodles are soaked in the sauce.

Add the green parts of your scallions and bean sprouts and give your noodles one last toss.

Place your noodles in a bowl.

6 oz beef flank or sirloin, thinly sliced
1 tsp soy sauce
1 tsp shaoxing wine
0.5 tsp cornstarch
1 tsp neutral oil
0.5 small onion, thinly sliced
1 inch ginger, thinly sliced
2 scallions, white and green parts separated
0.5 cup bean sprouts
8 oz fresh rice noodles ho fun or chow fun style
2 tbsp dark soy sauce
2 tbsp light soy sauce
2 tsp sugar
0.25 tsp white pepper
0.125 tsp MSG
