Scoopable Cheesecake

Directions

  1. 1Combine strawberries and sugar in a small saucepan over medium heat; cook, stirring occasionally, until soft. Then, blend the mixture until smooth and set aside to cool.
  2. 2In a bowl, mix together the crushed graham crackers, sugar, and melted butter.
  3. 3Whip heavy cream in a bowl until stiff peaks form.
  4. 4In a separate bowl, whisk together the cream cheese, powdered sugar, and sour cream until smooth. Incorporate the melted white chocolate into the cream cheese mixture, then fold in the whipped cream.
  5. 5Layer the ingredients in a square pan: spread a portion of the cheesecake filling, followed by strawberry sauce and the graham cracker crumble. Repeat with the remaining ingredients.
  6. 6Cover and chill in the refrigerator overnight before serving.

Tips

  • If you don't love white chocolate, you can barely taste it in this recipe; it's used primarily for density.
  • The folded-in whipped cream helps the cheesecake set properly.
