Chicken Bacon Ranch Casserole

Directions

  1. 1Start by adding six pieces of chopped bacon to a hot oiled pan and cook them until they get nice and crispy.
  2. 2Once crispy, grab a bowl, throw them in there, and set them aside.
  3. 3Drain a little bit of the grease from the pan.
  4. 4Add one small diced onion and three to four minced garlic cloves.
  5. 5Stir those in and sauté them until they start to get soft.
  6. 6Add one brick of softened, cubed cream cheese.
  7. 7Add two cups of whole milk, one packet of ranch dressing mix, and one cup of freshly shredded mozzarella cheese.
  8. 8Whisk this until it's nice and creamy.
  9. 9Turn the heat off.
  10. 10Add 8 oz of cooked rotini and four cups of cooked shredded chicken.
  11. 11Add some fresh chopped green onions or dried chives.
  12. 12Stir all of this in to get it nice and coated.
  13. 13Transfer it into a 9x13 baking dish.
  14. 14Bring the cooked bacon back in and sprinkle it in a layer on top.
  15. 15Add two cups of mozzarella cheese on top of that.
  16. 16Throw the whole thing in the oven at 375 for 25 to 30 minutes.
  17. 17When it comes out, it should be bubbling hot and crispy on top.
  18. 18If you have parsley, throw it on to make it look fancy.
  19. 19Grab a spatula, cut a piece out, and put it on a plate.
  20. 20Add some hot sauce if you're feeling spicy.
  21. 21Grab a fork and scoop up a big old bite.
