Serves 1

Directions

  1. 1Mix sugar with water and two long peppers in a saucepan.
  2. 2Caramelize this mixture on a medium-high heat.
  3. 3Once a nice golden color starts to form, add 150 grams of untoasted hazelnuts.
  4. 4While stirring, keep on heating the caramel for around 4 minutes to toast the nuts and give the sugar some more color.
  5. 5Pour the caramelized hazelnuts onto a silicone mat and let it cool down out of the fridge.
  6. 6Transfer the cooled mixture into a blender and blend it into a fine praline.
  7. 7Scrape down the sides and continue blending until you reach your desired consistency.
  8. 8Once happy with the consistency, it's ready to be used.

Tips

  • In the beginning, it may seem that not much is happening, but just scrape down the sides and give it some more time. It's so worth it.
