1Start by grabbing 16 slices of beef bacon, turkey bacon, centre cut bacon or short cut bacon and cut each slice in half.
2Cook the bacon in the oven at 180°C / 350°F for 20-25 minutes (flip halfway) or in an air fryer at 185°C / 370°F for 7-8 minutes.
3In a bowl, add 8 eggs and 500g of egg whites, then whisk them together.
4Blend 300g of low-fat cottage cheese until smooth.
5Add the blended cottage cheese to the egg mixture and mix.
6Add 5g of parmesan cheese, 1 tsp of onion and garlic powder, and mix it together one more time.
7To a pan on medium heat, spray a bit of oil and add just enough egg mixture to cover the pan.
8Let it cook for a few minutes, then fold the edges of the egg to the middle and flip it over to create an egg pocket.
9Repeat the process to make 8 egg pockets in total.
10Toast 8 bagels (bagel thins or low carb bagels).
11Assemble each bagel by adding an egg pocket, a slice of cheddar cheese, and 4 bacon slices.
12Place the top half of the bagel on top and assemble the other 7 bagels.
13Wrap them up, store them in the freezer, and reheat when you’re ready to eat.

Tips
When cooking the eggs use the smallest pan you have available, if your pan is too big you might need to use more eggs to cover the entire surface of the pan.
Store all the breakfast bagels in the freezer.
For the best reheating results place one in the fridge the night before you plan on consuming.
Do not microwave straight from the freezer as it’s harder to get a good texture, instead take it out the foil, wrap in a damp paper towel & microwave for 2 - 4 minutes (time may vary depending on the microwave).
