Directions
- 1Make cuts in the eggplant flesh as seen in the video.
- 2Add salt and pepper.
- 3Add oil and bake with the skin up also with oil for 30 min. at 190ºC.
- 4Turn over, mash with a fork and fill with tomato, cheese, oregano, some cherry tomatoes and bake again for 10 min until golden brown.
