Cut potatoes into matchsticks.

Pick a few cabbage leaves.

Place the fries into a jar.

Add 2 tablespoons of salt.

Pour water over the fries.

Cover with cabbage leaves and seal the jar.

Let it sit in a cool dark place for 7 days.

Drain the water and pat the fries dry.

Double fry the fries. First at 325°F for about 5 minutes, then at 400°F for another 3 minutes.

Serve immediately without additional seasoning.
