Beef And Onion Stir Fry

  1. 1Cut four green onions right in the middle to separate the white and the green part.
  2. 2Split the white part of the green onion in half and cut into 2-inch sections.
  3. 3Cut the green part of the green onion into 2-inch sections and keep them separate from the white part.
  4. 4Mince about four cloves of garlic by crushing with a knife and finely mincing.
  5. 5Cut one onion into large strips and separate the layers.
  6. 6Slice beef against the grain into average thickness.
  7. 7Marinate the beef with 2 tsp soy sauce, 2 1/4 tsp dark soy sauce, 3/4 tsp oyster sauce, 3/4 tsp sugar, 1 1/2 tsp baking soda, and 4 1/2 tsp corn starch. Mix well.
  8. 8Add 3 tsp oil and 1 1/2 tsp sesame oil to the marinated beef and mix again.
  9. 9Preheat your pan over medium-high heat and add 3 tbsp oil.
  10. 10When the oil is hot, add the onion and the white part of the green onion.
  11. 11Stir fry the onions just enough to get rid of the raw spicy taste.
  12. 12Season the onions with 1/4 tsp sugar and 1/4 tsp salt.
  13. 13Remove the cooked onions from the pan when they are ready.
  14. 14Add a little bit more oil to the hot pan.
  15. 15Add the beef and spread them out; let them pan fry until the bottom is slightly brown.
  16. 16Stir the beef to flip them over and add the minced garlic.
  17. 17Stir fry the beef to mix the garlic evenly until the beef is about 70% done.
  18. 18Add 1 1/2 tbsp rice wine to the edge of the pan.
  19. 19After the rice wine cooks off, add 3 tsp dark soy sauce and 1 1/2 tsp oyster sauce and mix well.
  20. 20Add 1/3 cup water to the pan.
  21. 21When the sauce starts to thicken, add some crushed black pepper and all the cooked onions back to the pan.
  22. 22Give a few stirs to mix everything together.

Tips

  • Add oil only after the marinating seasoning has been mixed into the beef.
  • Do not overcook the onions to preserve their crunchy texture.
  • Add rice wine to the edge of the pan so the hot pan can bring out the aroma.
