1In a food processor, break up and add 7 slices of matzo. You want to pulse until it is in small pieces but doesn’t look completely ground up. It will look a little smaller than corn flakes.
2Add peanut butter, syrup, honey, and salt. Pulse until it becomes the consistency of dough.
3Taste the mixture, if you want it sweeter, add more honey or maple syrup.
4Scoop about 1.5 T of the dough into your hands - squeeze and then roll into a ball.
5Place on a parchment lined baking sheet.
6Place in freezer for 15 min.
7Melt chocolate in a bowl with oil.
8Microwave in 30 sec increments, stirring between until melted.
9Drop each ball in chocolate and coat.
10Use a fork to let excess chocolate drip off.
11Place on parchment sheet.
12Refrigerate for at least 30 min, or until chocolate looks solidified.
