Air Fryer Chicken Quiche

Directions

  1. 1Cut the boneless chicken thighs into bite-size pieces.
  2. 2Season chicken with salt, black pepper, and your preferred spices, then mix well.
  3. 3Peel the potatoes and slice them very thinly using a mandoline or sharp knife.
  4. 4Lightly brush a heatproof glass baking dish with olive oil.
  5. 5Arrange the potato slices in an even, slightly overlapping layer in the dish.
  6. 6Season the potato slices lightly with salt.
  7. 7Place the dish in the air fryer basket.
  8. 8Air fry at 180°C / 360°F for 10 minutes, until the potatoes start to soften.
  9. 9In a bowl, beat the eggs with finely chopped fresh parsley, salt, and black pepper until well combined.

  11. 11Spread the seasoned chicken evenly over the pre-cooked potato base.
