Grate ginger into a bowl.

Add some yogurt to the bowl.

Add turmeric to the bowl.

Add chili powder to the bowl.

Add a pinch of salt to the bowl.

Sift gram flour into the bowl with the other ingredients.

Add water and whisk the mixture until you achieve a loose batter.

Pour the mixture into a non-stick pan.

Cook the mixture on medium heat, stirring constantly, until it thickens up.

Take a spoon and spread the thickened mixture thinly over a plate or oiled surface.

Let the mixture cool down for about 2-3 minutes.

Cut lines into the cooled mixture.

Roll the strips of the mixture into spirals.

Heat oil in a small pan for the tempering.

Add mustard seeds to the hot oil.

Add sesame seeds to the pan.

Add hing to the pan.

Add green chilies and curry leaves to the pan.

Pour the tempering over each piece of the prepared rolls.

Sprinkle grated coconut over the rolls.

Tips
Spread the mixture as thin as you can to get better rolls.
The tempering of the spices (tadka or vaghar) is the main thing that will make the dish taste amazing, no matter how it looks.
