Directions

  1. 1Grate ginger into a bowl.
  2. 2Add some yogurt to the bowl.
  3. 3Add turmeric to the bowl.
  4. 4Add chili powder to the bowl.
  5. 5Add a pinch of salt to the bowl.
  6. 6Sift gram flour into the bowl with the other ingredients.
  7. 7Add water and whisk the mixture until you achieve a loose batter.
  8. 8Pour the mixture into a non-stick pan.
  9. 9Cook the mixture on medium heat, stirring constantly, until it thickens up.
  10. 10Take a spoon and spread the thickened mixture thinly over a plate or oiled surface.
  11. 11Let the mixture cool down for about 2-3 minutes.
  12. 12Cut lines into the cooled mixture.
  13. 13Roll the strips of the mixture into spirals.
  14. 14Heat oil in a small pan for the tempering.
  15. 15Add mustard seeds to the hot oil.
  16. 16Add sesame seeds to the pan.
  17. 17Add hing to the pan.
  18. 18Add green chilies and curry leaves to the pan.
  19. 19Pour the tempering over each piece of the prepared rolls.
  20. 20Sprinkle grated coconut over the rolls.
  21. 21Sprinkle some chili powder on top.

  • 1 tsp sesame seeds
  • 0.25 tsp hing
  • 2 green chilies
  • 5 6 curry leaves
  • 3 tbsp oil
  • coconut

Tips

  • Spread the mixture as thin as you can to get better rolls.
  • The tempering of the spices (tadka or vaghar) is the main thing that will make the dish taste amazing, no matter how it looks.
