1Prepare the marinade by combining yogurt, minced garlic, ginger paste, lemon juice, salt, and half of the spice mix.
2Marinate the chicken breast for at least a couple of hours (preferably overnight).
3Prepare the masala sauce by cooking onions until translucent, adding garlic and ginger, then tomato paste, the remaining spice mix, canned tomatoes, water, and cilantro. Simmer for 15 minutes, then blend until smooth.
4Add Greek yogurt, butter, cilantro, and salt to the sauce and mix well.
5Grill the marinated chicken until charred, then dice it into small pieces.
6Add the diced chicken to the sauce and simmer for 15-20 minutes.
7Mix in cooked basmati rice into the chicken and sauce mixture.
8Assemble the burritos by placing portions of the mixture onto tortillas and wrapping them tightly.
Refrigerate meat/rice mixture for ~20 minutes before assembling burritos.
Reheat instructions: remove from freezer, wrap in a paper towel, microwave for 2 mins, then air fry at 375 for 6-8 minutes to crisp up your tortilla, or pan fry
