1Coat the salmon in the avocado oil, honey, sriracha and soy sauce.
2Transfer salmon to a parchment-lined baking sheet.
3Bake for 10-11 minutes.
4Broil for 1-2 minutes at the end to get that crunchy top.
5Remove from oven and set aside.
6Make the spicy sauce by adding cottage cheese, lime juice, sriracha, cumin, onion powder, smoked paprika and honey to a blender and blending until completely smooth.
7Taste and adjust seasonings as needed.
8Add cucumbers, avocado, cilantro, lime juice and honey to a bowl and toss well.
9Add rice to a bowl.
10Add salmon bites.
11Add cucumber-avocado salad.
12Drizzle the spicy sauce on top.
