Cut the cabbage into wedges.

Put the cabbage wedges on heat to color the outside.

Add butter to the pan off the heat.

Add a couple spoons of water and a sprinkling of salt.

Place in a low oven, set to 120°C, to gently cook through for 1 hour and 25 minutes.

Tips
Cutting the cabbage into wedges to quarter the cooking time.
The fat protects the vegetable, allowing it to slowly caramelize, becoming sweeter and more enhanced in flavor.
Cooking the cabbage at a low temperature will prevent it from turning to mush, and will allow the leaves to slowly go translucent and tender.
