1Cut your thicky boy thighs into 1/2-inch chunks and place in a bowl with Shaoxing wine, corn starch, and salt.
2Marinate for 15 minutes.
3Finally mince some garlic, cut your onions into wedges, and cut your scallions into 1/2-inch pieces.
4For the sauce, combine dark soy sauce, light soy sauce, oyster sauce, sesame oil, vinegar, Shaoxing wine, sugar, and black pepper, and mix thoroughly.
5Lube up your pan and toss your chicken in and cook for 5 minutes before setting to the side.
6Then in the same pan, add in your garlic, onions, and scallion whites and cook for 2 minutes.
7Add back in your chicken and the sauce and cook until your sauce is thickened, which took me around 3 minutes.
8Finally, place your chicken on a fresh bowl of rice.
