High Protein Meal Prep Breakfast McGriddles

Directions

  1. 1In a bowl, add plain flour, baking powder, cinnamon, and zero calorie sweetener.
  2. 2Mix the dry ingredients well.
  3. 3Add one egg and low-fat milk to the mixture.
  4. 4Mix until a thick pancake batter is formed.
  5. 5Equally distribute the pancake mixture into egg rings in a pan.
  6. 6Add some sugar-free maple syrup on top of the pancakes.
  7. 7Cook the pancakes on medium heat for about 3 minutes on each side.
  8. 8In a separate bowl, add extra lean beef mince.
  9. 9Add salt, onion powder, garlic powder, sage, and thyme to the mince.
  10. 10Mix well and form six equal balls.
  11. 11Flatten the mince balls in a pan.
  12. 12Cook the patties on medium-high heat for 2 minutes on each side.
  13. 13In a bowl, mix together six eggs, salt, and blended cottage cheese to make them extra fluffy.
  14. 14Pour a thin layer of the egg mixture onto a pan on medium heat.
  15. 15Once cooked, fold the sides of the egg towards the middle to create an egg pocket. Repeat to make six egg pockets.
  16. 16Assemble each McGriddle by placing a slice of cheddar cheese on a bottom pancake.
  17. 17Add a beef patty on top of the cheese.
  18. 18Place an egg pocket over the beef patty.
  19. 19Add another pancake on top to complete the McGriddle.
  20. 20Repeat the process for the other five McGriddles.
  21. 21Wrap them up, freeze them, and reheat when ready to eat.
