Shaam-Savera Kofta

Directions

  1. 1Boil spinach.
  2. 2Grind the boiled spinach into a smooth paste.
  3. 3Heat ghee in a pan.
  4. 4Add cumin seeds, chopped ginger, and chopped green chilies to the pan.
  5. 5Add coriander powder, garam masala, and black pepper powder.
  6. 6Add rock salt to taste and mix well.
  7. 7Add the spinach puree and besan (gram flour) to the pan.
  8. 8Add a little water and cook until the mixture thickens.
  9. 9In a separate bowl, mix grated paneer, black pepper powder, rock salt, and chopped coriander leaves.
  10. 10Shape the paneer mixture into small balls for stuffing.
  11. 11Take a small portion of the cooked spinach mixture, flatten it, and place a paneer ball inside.
  12. 12Seal the spinach mixture around the paneer ball and reshape it into a kofta.
  13. 13Deep-fry the koftas until golden and crisp.
  14. 14In another pan, heat ghee.
  15. 15Add garam masala, dry red chilli, bay leaf, chopped ginger, and green chillies.
  16. 16Add chopped tomatoes, cashews, and coriander stems.
  17. 17Season with red chilli powder, turmeric powder, Kashmiri red chilli powder, and coriander powder.
  18. 18Cook well, add water, and simmer the mixture.
  19. 19Grind the cooked mixture into a smooth paste and adjust consistency with more water if needed.
  20. 20Let the masala boil, then gently add the fried spinach-paneer koftas.
  21. 21Serve hot, garnished with fresh coriander.

  • 1 tsp Kashmiri red chilli powder
  • 1 tsp coriander powder
  • as needed water
  • to taste salt
