Directions

  1. 1Add sundried tomato oil to a pan.
  2. 2Add diced onion and sundried tomatoes to the pan.
  3. 3Add chicken to the pan.
  4. 4Add red pesto to the mixture.
  5. 5Add chicken stock to the pan.
  6. 6Add rice to the pan and stir.
  7. 7Cover the pan and cook for 20 minutes.
  8. 8Serve the marry me chicken one-pot rice.

Ingredients

  • 1 onion
  • 300 g chicken breasts
  • 80 g sundried tomatoes
  • 2 tsp garlic Italian herbs
  • salt
  • pepper
  • 20 g reduced fat red pesto
  • 400 ml chicken stock
  • 240 g long grain rice
  • 75 ml single cream
  • fresh basil
