Separate the egg yolks from the whites and set aside the whites.

In a bowl, put butter, sugar, cream cheese and whisk it all up.

Add egg yolks one by one and whisk them in too.

Then add in flour and cornstarch.

Mix it all up with a little bit of milk.

In another bowl, start whisking your egg whites while slowly adding in sugar.

Combine both mixtures, but fold gently, don't mix. You want the air to get inside the batter.

Butter up a metal tin and pour in your batter.

Tap your tin to remove any bubbles.

Put it on a tray with some water.

Preheat your oven at 200 degrees Celsius or 390 degrees Fahrenheit and pop in your cheesecake for 15 minutes.

Then reduce the temperature to 140 degrees Celsius or 280 degrees Fahrenheit and bake for another 30 minutes.

Turn off your oven and leave it in for another 30 minutes.
