Directions

  1. 1Slice the chicken breast in half to create chicken breast cutlets.
  2. 2Drizzle generous amounts of oil onto the chicken breasts.
  3. 3Season the chicken with chipotle chili powder and paprika.
  4. 4Add an Italian herb blend to the chicken.
  5. 5Finish seasoning the chicken with salt, pepper, garlic, and onion.
  6. 6Drizzle a little more oil into a hot pan.
  7. 7Place the seasoned chicken into the hot pan to cook.
  8. 8Cook the chicken until it has a nice char, which adds flavor.
  9. 9Add lots of diced onions to the same pan where the chicken was cooked.
  10. 10Scrape the pan to unlock all the flavor from the cooked chicken and spices.
  11. 11Add minced garlic to the onions in the pan.
  12. 12Add grass-fed butter to the pan to make it healthy.
  13. 13Once the butter melts, pour in heavy cream.
  14. 14Pour in all the cooking juices from the rested chicken into the sauce.
  15. 15Grate Italian snow (Parmesan cheese) into the sauce.
  16. 16Add the fettuccine to the sauce when it's almost done cooking.
  17. 17Place the blackened chicken on top of the pasta and sauce.
  18. 18Sprinkle parsley flakes over the chicken and pasta for garnish and added flavor.

Tips

  • Don't be afraid to spice the life out of the chicken to create flavor on the bottom of the pan.
  • Don't be afraid of a nice char, it's not burnt, it's flavor.
  • Make sure to scrape the pan to unlock all the flavor from the onions.
  • The only salt added is in the pasta water and on the chicken at the beginning.
  • When the fettuccine is almost done, add it to the sauce and watch it slowly soak up all the sauce.
  • When serving, throw the blackened chicken on top and hit it with some parsley flakes for garnish and flavor.
  • For Italians, traditional alfredo only contains three ingredients, so this is not traditional, but it's very good and full of flavor
