Chicken Alfredo Stuffed Potatoes

Directions

  1. 1Place the potato on the baking tray.
  2. 2Drizzle oil on the potato.
  3. 3Rub the oil on the potato to coat it.
  4. 4Sprinkle salt on the potato.
  5. 5Bake the potato in the oven for 1 hour at 400 degrees Fahrenheit.
  6. 6Cut the potato in half.
  7. 7Scoop out the potato flesh and place it in a bowl.
  8. 8Add Alfredo sauce to the bowl with the potato.
  9. 9Add cooked chicken to the bowl.
  10. 10Add spices to the bowl.
  11. 11Add shredded mozzarella cheese to the bowl.
  12. 12Mix all the ingredients well.
  13. 13Stuff the potato halves with the mixture.
  14. 14Add extra mozzarella cheese on top of the stuffed potatoes.
  15. 15Bake the stuffed potatoes in the oven for 12 to 15 minutes at 425 degrees Fahrenheit, or until the cheese has melted.
  16. 16Optionally, broil the potatoes for the last couple of minutes.
  17. 17Place the stuffed potatoes on a serving plate.
  18. 18Drizzle chili onion crunch on top of the potatoes.
  19. 19Garnish with fresh parsley.

  • 0.5 cup chopped/cooked chicken
  • 0.5 cup shredded mozzarella
  • garlic powder
  • paprika
  • oregano
  • black pepper
  • salt
  • 2 tbsp Alfredo sauce
  • chili onion crunch
  • fresh parsley
  • oil

Tips

  • Bake the potato with oil and a little sprinkle of salt for 1 hour at 400 degrees Fahrenheit.
  • Once potatoes have cooled a little bit, cut them in half.
  • Scoop potato filling out of potato carefully and place in a bowl with chicken, spices, cheese and Alfredo sauce.
  • Mix the ingredients together.
  • Place the mixture evenly into the potatoes.
  • Place back in oven at 425 degrees Fahrenheit, top with extra mozzarella for 12-15 minutes or until cheese has melted.
  • Broil for the last couple of minutes if preferred.
  • Top it with fresh parsley and chili onion crunch.
  • This serves 1 or 2 potato halves depending on how many stuffed potato halves you’d like so double up as needed.
