Blueberry and Custard bun

Directions

  1. 1Mix together the sugar, vanilla extract and egg yolks.
  2. 2Now mix in the flour and set aside.
  3. 3In a pan, heat up the milk on medium heat and remove from heat right before it boils (bubbles will start to appear).
  4. 4Add half of the warm milk to the egg mixture and mix.
  5. 5Once it ’s fully mixed add the rest of the milk and mix.
  6. 6Transfer it back to the pan and put it back on the (medium) heat.
  7. 7Keep on stirring until the mixture starts to thicken.
  8. 8Get it of the heat and transfer to a bowl, cover it with cling film or aluminum foil (make sure it touches the custard) and leave in the fridge until needed.
  9. 9Preheat the oven to 180C and line a baking tray with parchment paper.
  10. 10In a (standmixer) bowl add the yeast, flour, and sugar.
  11. 11Using a spoon, make a well in the middle to add in the eggs and milk.
  12. 12With a dough hook, mix the ingredients together on a low speed until it starts to form a dough.
  13. 13Gradually add the chopped butter until it ’s fully incorporated and mix on medium speed.
  14. 14Chop the dough into 6 equal balls.
  15. 15Add the dough balls on a lined baking tray and cover with a towel.
  16. 16Set aside to rise for at least 25 minutes.
  17. 17Mix together all streusel ingredients except the blueberries until it forms a crumbly texture.
  18. 18Once the buns have risen, remove the towel.
  19. 19Using a floured spoon, make a slight well in the centre of each bun.
  20. 20Take your custard out of the fridge and add it to a piping bag, pipe the custard in each well.
  21. 21Sprinkle some blueberries and the streusel on top.
  22. 22Lastly bake at 180C for 20 minutes.

  • 25 g caster sugar

  • 50 ml whole milk
  • 80 g unsalted butter, cubed and softened
  • 65 g white sugar
  • 80 plain flour
  • 45 g unsalted butter
  • 150 g blueberries (for topping)

Tips

  • If the streusel topping is not crumbly enough, add a little more flour.
  • Leftover custard can be enjoyed plain or in a different bake.
