Yorkshire Puddings with Chives

Directions

  1. 1Fill any sort of cup with eggs first, as you want equal amounts. Eggs are the easiest thing to measure first.
  2. 2Pour the eggs into a big bowl.
  3. 3Add the same amount of milk as the eggs to the bowl.
  4. 4Add a pinch of salt to the mixture.
  5. 5Give the mixture a good mix.
  6. 6Add the same amount of flour as the eggs and milk to the bowl, a little at a time, and whisk.
  7. 7Let the batter sit for about an hour.
  8. 8Pour some duck fat into a muffin tin.
  9. 9Place the muffin tin with duck fat into the oven preheated to 400 degrees Fahrenheit for about 10 minutes.
  10. 10Add chives to the batter.
  11. 11Pour the batter into something with a spout for easy pouring.
  12. 12Quickly grab the muffin tin from the oven; the fat should be smoking.
  13. 13Give the batter a final mix.
  14. 14Quickly pour the batter into the hot muffin tin.
  15. 15Quickly place the muffin tin back into the oven, keeping it at 400 degrees Fahrenheit for now.
  16. 16After 10 minutes, turn the oven down to 375 degrees Fahrenheit.
  17. 17Monitor the Yorkshire puddings for the white inside to start turning golden and for a toasty smell, as this indicates they are done.
  18. 18Once done, remove them from the oven.
  19. 19Go in with some melted butter.
