Brown the chicken thighs with 1 tbsp of olive oil and season them, then set aside.

Cook the bacon until crispy, then set aside.

Add onion and garlic to the pan, cook until soft, season, then add the leeks and cook until softened.

Return the bacon to the pan and mix.

Dice the cooked chicken thighs.

Chop fresh parsley and tarragon.

Melt butter in a separate saucepan over medium heat.

Add flour, whisking continuously until a smooth roux forms.

Gradually add chicken stock to the roux, whisking until thickened and smooth.

Stir in the chopped chicken, parsley, tarragon, and mustard.

Pour the roux into the chicken mixture, stirring until everything is well combined.

Preheat the oven to 190°C.

Line a pie dish with shortcrust pastry and blind bake until golden.

Fill the pie crust with the chicken mixture.

Roll out the top crust of puff pastry.
