Beef Cheek and Ale Pie

Directions

  1. 1Toss the beef cheeks in flour.
  2. 2Heat olive oil in a pan and brown the beef cheeks in batches.
  3. 3Remove the browned beef and set aside.
  4. 4In the same pan, sauté diced onion, carrots, and celery for 5 minutes. Add minced garlic and sauté.
  5. 5Add tomato paste to the pan and mix.
  6. 6Pour in ale and beef stock, then add roasting herbs (thyme, bay leaf).
  7. 7Return the beef cheeks to the pan with the liquid.
  8. 8Place the pan in the oven at 150°C for 3-4 hours until the beef is spoon tender.
  9. 9Once cooked, shred the beef cheeks.
  10. 10Line a pie dish with short crust pastry.
  11. 11Spoon the beef cheek filling into the pastry-lined pie dish.
  12. 12Cover the filling with another layer of short crust pastry.
  13. 13Trim the edges of the pastry and seal them with a fork.
  14. 14Brush the top of the pie with beaten egg and create a vent in the center.
  15. 15Bake the pie in a preheated oven at 200°C for 25-30 minutes until golden.
  16. 16Peel and cut Maris Piper potatoes into chip-like pieces.
  17. 17Boil the potato chips in cold, salted water for 8 minutes, then remove and let them cool.
  18. 18Heat vegetable oil to 115°C for the first fry and cook the chips for 10-12 minutes. Remove and set aside.
  19. 19Increase oil temperature to around 180°C and fry the chips again until golden brown.
  20. 20Pour marrow fat peas into a pan and bring to a simmer, letting them reduce by half.
  21. 21Add a knob of butter, a handful of mint, a sprinkle of salt, and a squeeze of lemon to the peas.
  22. 22Make some gravy.
  23. 23Serve the beef and ale pie with chips, mushy peas, and gravy.
