Directions

Place the ground lamb into a skillet and start cooking it to get it nicely caramelized.

Season the lamb with salt and freshly ground black pepper.

Mix well and break up any lumps in the lamb.

Add diced onions and shredded carrots to the skillet.

Mix everything together to combine all ingredients.

Add garlic to the mixture and mix everything together.

Add tomato paste to the mixture, stirring to incorporate and create more fond.

Deglaze the pan with red wine, mixing to prevent anything from burning.

Repeat the red wine addition and mixing process until all wine is gone, ensuring nothing sticks to the pan.

Add chicken stock and let it simmer until fully reduced, breaking any remaining lumps under medium heat.

Once reduced, add Worcestershire sauce and mix it thoroughly.

Throw in thyme and rosemary, followed by more freshly ground black pepper.

Mix all ingredients together until the meat is ready.

Transfer the cooked meat mixture into a baking dish, spreading it evenly.

After the potatoes have been boiled, add butter, cream cheese, and Parmesan cheese.

Mash everything together while it's still hot.

Add heavy cream to make the mashed potatoes extra creamy.

Mix until you achieve incredibly tasty mashed potatoes.

Spoon the mashed potatoes on top of the meat, creating peaks for a nice crunch when baked.

Place the baking dish into an oven set to broil for 7 minutes.

Once done, remove from the oven.

Drizzle with clarified butter and sprinkle with parsley to finish.

Tips
Making peaks with the mashed potatoes before baking will result in a nice crunch.
