Serves 1

Directions

  1. 1Preheat your oven to 350 degrees Fahrenheit.
  2. 2Using a stand mixer, beat the eggs and sugar together until the mixture is light in color and slightly thickened.
  3. 3Add the butter and vanilla to the mixture and mix for two minutes.
  4. 4Stir in the flour until just combined.
  5. 5Add the cranberries and stir to incorporate.
  6. 6Spread the batter into a buttered 9x13 pan.
  7. 7Bake until very lightly browned and a toothpick inserted into the center comes out clean.
  8. 8Let the cake cool completely before slicing.

Ingredients

  • 3 whole egg
  • 2 cup sugar
  • 3/4 cup butter, softened
  • 1 tsp vanilla
  • 2 cup all-purpose flour
  • 12 oz fresh cranberry

Equipment

stand mixer9x13 pantoothpick

Tips

  • Do not skip the step of beating the eggs and sugar for 5-7 minutes, as the eggs act as the leavening agent.
  • The egg and sugar mixture should almost double in size and form a ribbon when the beaters are lifted.
  • The creator cuts the finished cake into 1x2 inch pieces for easy serving at parties.
